Las Fernandicas (Calle Cerezo, 2. Tel. 923 57 00 54) €€

Tere Velasco is the soul, genius and figure of this unique and must-visit family home.

We can proudly boast of having "discovered" this place to critics of renown. Those of us who have been beating the area for a few years have enjoyed so much with so little. Or, rather, with such simplicity: stir-fried potatoes, corns, pork, beans with handyman …

Here is served what has been cooked that day and it does not matter, because everything is pure home. His cheese “cart”, a full stretcher table, is pictured.

The Gonzalo Inn (Plaza del Poeta Iglesias, 10. Tel. 923 21 72 22) €€

Unstoppable, Gonzalo Sendín is the king of Charra gastronomy thanks to the updating of his concepts.

In this house he has always eaten cinema, but it is now, with Gonzalo more than settled as a relief from his father, when an evolution that looks beyond is perceived.

Its recently opened bar proposes an informal bet on the top, while the restaurant is kept below with dishes such as carabineros' sweet rice, sweet potato pig's trotters or magnificent charras meats. The cup, in Las Tapas de Gonzalo, its bar with terrace in the Plaza Mayor.

Tapas 3.0 (Sánchez Barbero, 9. Tel. 923 61 96 19) €€

Jorge Lozano and Soraya Sánchez are tweeters, funny and very, very talented. Salamanca reloaded or how to update charro without losing your mind. Iberian hornazo, some wild potatoes to take off your hat, red hot chili burger of native veal, casserole stew and nose stews, farinato croquettes with yellow chili …

Everything here is fun and forceful, like its successful weekly menu (€ 16 and with artisan bread from Arapiles). Its always lively terrace invites you to extend the desktop.

Rivas (Road, 19. Tel. 923 32 04 71) $$$

A large one from Salamanca and the region, now with a refurbished image. Juanjo Rivas takes the kitchen in the genes and demonstrates it with an impeccable evolution in classics such as chickpeas with boletus, crayfish tails in tempura or truffle dumplings.

Keep an eye on your bet for mature, magnificent and reasonably priced meats. Generous cellar and family service. To repeat and recommend clueless travelers.
